- Freeze-drying is a process that removes moisture from food while preserving its shape, colour, whilst locking in its nutrients, natural flavours and antioxidants. In the case of freeze-dried strawberries, fresh local strawberries are frozen and then subjected to low pressure and temperature, causing the ice in the fruit to sublimate (change from a solid to a gas) without passing through the liquid phase. This process results in strawberries that are light, crunchy, and intensely flavoured.
- The freeze-dried strawberries are then coated with many layers of pure chocolate. The layering process is a meticulous one. Each strawberry piece is placed in a specialised revolving pan, and as it rotates, pure couverture liquid chocolate is added gradually. Over time, the coating hardens, and this process is repeated multiple times, creating layer after layer.
